It’s the symbolic end of summer with Labor Day Weekend. I always try to do something centering around the pool since we close it for the season after Monday. I set up the pool house for lunch, but wanted to sit on the patio for dessert. This cake is so simple and refreshing. It’s perfect for a hot day by the pool!
I don’t particularly enjoy baking, but my daughter has started to take a real shine to it. She loves to watch Junior Chef and The Great British Bake Off. I thought this cake would be a great thing to make together. It’s designed to be imperfect and a little messy, giving us wiggle room as aspiring bakers. She was so proud of the cake and it was delicious. I even felt good about it being full of healthy fruit and let’s be honest, no one can turn down homemade buttercream!
Lemon and Berry Cake
White Cake Mix by Stay at Home Chef
2 stick unsalted butter, softened
3 C powdered sugar
2-3 T heavy whipping cream
1 tsp vanilla extract
1 C strawberries, sliced
3/4 C blueberries
We used the Stay at Home Chef’s recipe for white cake. It is really easy to make and unbelievably moist and light. It makes three layers of 9 inch round cakes. Let them cool completely before putting together the cake. To make the icing, whip the butter and slowly add the powdered sugar as you go. Once combined, add in the cream and vanilla until the frosting is smooth and fluffy.
Place a cake layer on your serving dish and use a spatula to put a heavy layer of frosting on top of this. Cover with sliced strawberries and blueberries and a heavy dusting of lemon zest. Repeat with the next layer to your desired height. And that’s it!
I served mine with cold glasses of lemonade and Pomegranate’s blue and pink gingham patterned placemats and napkins. The classic check is just so perfect for every summer holiday and it looked amazing with the fresh berries on the cake. Enjoy!
