Breakfast is always a big staple in our house. My kids are at the ages where they constantly have activities going on. Whether it’s soccer practice in the evenings or sleepovers on the weekends, it seems almost impossible to get everyone together for a meal. The mornings, however, are a different story. Especially now that they are on summer break, I like to take a little extra time and cook together.
I’ve found that with kids or adults of any age, you can almost never go wrong with pancakes. They’re easy to cook and pretty fast, but a really fun thing to make as a family team. Plus they’re so versatile: everyone can pick their favorite toppings or fillings for a custom taste. We popped on our Pomegranate Chef’s Coats and my daughter and I whipped up the batter. My husband took over the griddle as my son whisked around the kitchen, filling bowls with fruits and chocolate chips to put in the batter.
It was a wonderful way to spend time together and everyone started their day happy and full. To make it even more enjoyable you could use cookie cutters to make the pancakes into shapes. The varieties are endless, so have a blast getting in some quality time with those you love!
Pancakes for Four
1 C all-purpose flour
2 T sugar
1 tsp baking powder
2 pinches salt
1 cup milk
1 egg, beaten
Mix all of your dry ingredients in a bowl. Add your egg and milk and stir until there are no more lumps and the batter is smooth. Heat a large, buttered skillet to medium. Pour about half the size of the pancake you want into the pan, the batter will spread out. Once the batter starts to bubble, flip and cook the other side until done — about 2 minutes for each side.
If you want to put filling in them, once you pour the pancake sprinkle with your fillings. We love sliced strawberries, blueberries, chocolate chips and bananas.
Once cooked, serve in a stack with some fresh butter and your choice of syrup. I smothered mine in raspberry preserves and honey. And don’t forget to enjoy your pancakes with your favorite Pomegranate table setting; I made our table bright and fresh with the Pick Six placemats and our Pony Club Handblocked napkins.
